米飯（rice）是中國、日本和朝鮮等東亞地區最主要的糧食，口味香甜，可與五味調配。米飯的問世，可追溯至上古時期，華夏民族掌握了不同水量時的烹煮效果，就發展出較飽滿的米飯。 米飯的製法為一杯米加一杯到一杯半的水，煮出來的米適當的膨脹，裡面全熟，去除水份後即成。留有胚與糊粉層的大米飯含有人體90%的必需營養元素，且各種營養素十分均衡，所以是最佳主食。吃米飯時有一股淡淡的甜味主要是因為唾液澱粉酶的作用。
