刺身

刺身，也稱為魚膾、魚生、生魚片，指將新鮮的魚貝類生切成片，蘸調味料直接食用的菜品。 其製作方法是將鮮螺肉、北極貝、鮮蝦及鮮魷魚順序擺入盤中，三文魚片捲成玫瑰花型，碼入盤中，用青瓜片和裝飾葉子點綴，取涼拌海藻適量放入小碟中，在味碟中倒入適量醬油，在另一味碟中擠入少許青芥末，調勻後蘸食海鮮即可。 刺身其實就是中國古代的“魚膾”，歷史相當的久遠，可以追溯到周朝。早在周朝有吃生魚片的記載。現在出土的青銅器“兮甲盤”銘文記載：“周宣王五年，周師於彭衙迎擊獫狁，凱旋而歸。大將尹吉甫私宴張仲及其他友人，主菜是燒甲魚加生鯉魚片。”
