松茸（學名：Tricholoma matsutake (lto et lmai) Singer），別名為松口蘑、松蕈等，口蘑科口蘑屬植物，是松櫟等樹木外生的菌根真菌，世界上珍稀名貴的天然藥用菌，被譽為“菌中之王”，中國二級瀕危保護物種。 鮮松茸形若傘狀，色澤鮮明，菌蓋呈褐色，菌柄為白色，均有纖維狀茸毛鱗片，菌肉白嫩肥厚，質地細密，有濃郁的特殊香氣。主要產於四川、西藏、雲南等青藏高原一帶，生長在海拔2000米以上，大約50年左右的松樹林裡。對生長環境要求很高，需要與松樹形成菌根菌才能生長，它們需要依靠松樹的根生存。種類包括青岡松口蘑、假松口蘑、慄褐松口蘑等。松茸富含蛋白質，有18種氨基酸，14種人體必需微量元素等。 根據2008年的一項研究，自1941年起日本松茸年產量驟減95%，研究人員試圖研發人工培育技術，但成效甚微。2020年，松茸被世界自然保護聯盟列為世界瀕危物種（紅色名錄）。松茸，來源於中國的名字，宋哲宗元祐年間唐慎微的著作《經史證類備急本草》（1082-1094）中就有“松蕈”的記載，因生松樹下，菌蕾如鹿茸而得名。
